Well February 1st has come fast. I have been preparing all this month for my 30 day challenge, and I'm ready!!
Yesterday I went grocery shopping in the organic isle at Kroger, I picked up some "Amy's" vegan burritos, vegan cookies, vegan cheese, Soy milk, and a few other things and my bill was almost 100 bucks and I went to GNC to pick up my Vegan protein power and that alone was 70.00!! Oh well, I think I will just eat less for the next month. Later tonight I'm going to the local fruit market to pick up my locally grown fruits and veggies, and that will be the majority of my diet.
I'm really excited for the next month, I think it will be a good challenge for me, and it will help me to focus on better habits. I also plan on working out 4 to 5 nights a week, it should be fun to find time to sleep between working 3 jobs, and working out, but I'm going to do it.
Till Tomorrow.....

Money Sucks!
So Today was going to be my starting day for my 30 day challenge, however I have decided to postpone my journey until February. Josh and I have been talking, and unfortunately we just don't have the money to do this the right way. We can’t afford the right protein, or vitamins that we need to do this and still be healthy. So I will continue to be a vegetarian, and I will slowly be cutting out all other animal products until February when I can become a full fledge Vegan. So until February!

Happy New Years Eve!
So yesterday I posted on my facebook that I started a blog and I got mixed feeling about myself becoming a vegan. Here are the comments left by my friends:
Mat Dias y?
Rochelle Burk Why not?
Mat Dias because you're human, you have incisor teeth, meant to rip apart meat... because for thousdands of years without eating meat humans would have died... because if you look at biology to sustain life you must consumer other living things and being a vegan goes against the natural order of life
Kari Brown that's completely not supportive.. at all..
Heather Reif Every minute of every working day, thousands of animals are killed in slaughter-houses. Pain and misery are common. In the US alone, 500,000 animals are killed for meat every hour...Thats why!
Rochelle Burk Thanks Kari! And there are TONS reasons to become vegetarian! You should research what you are eating before you put it in your mouth!! Here are just a few from Yale College of Research:
Vegetarian diets are health-giving! In fact, 95% of former meat-eaters report that a switch to a vegetarian diet increases their energy, vitality, and well-being.
Vegetarian diets support the health of the environment by avoiding the massive deforestation, wasteful feeding of grain and corn to livestock, and over-consumption of water required to support a meat-based diet.
Scientific studies have shown that vegetarian diets are associated with lower rates of killer diseases like heart disease, colon cancer, breast cancer, osteoporosis, and even lung cancer. Americans are amongst the biggest meat-consumers in the world and consequently have the highest rates in the world of those diseases.
Vegetarianism has the power to solve the world hunger crisis. If Americans were to reduce their meat consumption by only 10%, every one of the 60 million human beings that starve to death on this planet would be adequately fed. Vegetarianism is based on the ideal of humane treatment of all living creatures.
Vegetarians avoid poisonous chemicals like hormones, antibiotics, and chemical contaminants found in animal products, such as heptachlor, PCBs, toxaphene, the bacteria salmonellosis and campylobacter, and the dioxin-containing chemical 2,4,5-T, which has been linked to immune deficiencies, sterility, contamination of mother's milk, and other health problems.
Vegetarian diets supply more than adequate amounts of protein, according to the American Journal of Clinical Nutrituion, the World Health Organization, and Food and Nutrition Board, and the National Research Council.
Vegetarians display greater stamina and strength than meat-eaters, as shown in numerous tests of muscular endurance.
Experts are now saying that 80% of cancer is preventable through healthy diets which contain low amounts of fats and oils and high amounts of fiber-the model vegetarian diet!
Heather Reif Every part of the human digestive tract points toward a vegetarian diet. Digestion begins in the mouth. Let’s examine the tooth and jaw structure of humans. Have you ever compared your teeth to those of a wolf or a tiger? Human teeth are flat or slightly rounded at most -- designed to grind plant material, not tear into the carcass of an animal. Carnivores, like wolves and tigers, can only move their jaws up and down whereas herbivores, like cows and horses, can move their jaws up and down as well as side-to-side. This side-to-side motion allows for the grinding and mastication of leaves and plants. Humans have the tooth and jaw structure which most closely resembles a herbivore - not a carnivore.
Rochelle Burk NICE!
Steve Burk You are going to have to share some vegan recipes with me so I can cook something for you when you come over here for dinner! Is Josh going vegan too? Make sure to get your protein!
Rochelle Burk I will bring some recipes over! and he is going to try it. I think he may have a hard time with it, but I'm going to do its, so maybe with a support system he can too!
Bill Gilsbach Vegans have smelly farts.
Rachel Gonzalez Those are HEALTHY farts Bill!
I thought this was pretty interesting! :)

Before My Journey Begans...
So last April I decided to take the 30 day challenge and become a Vegetarian. It was really easy for me. I had been watching videos, and reading all about what goes on at Factory Farms and Slaughter houses, and I knew I didn't want to contribute to the growing epidemic. So for the past 10 months I have devoted myself to learning more about what goes on at the farms, and what people are actually eating, and it is truly disgusting! We wonder why our nation is overweight, always sick, and dying younger. For the first time in our history, we are expected to live shorter lives then our parents, That's insane!
So this is where my journey begins. I myself am overweight, however since becoming a vegetarian, I have felt better about myself, but not truly satisfied. When I first gave up meat, I was leaning more in the vegan direction, but as time grew on, I slowly added more cheese and diary back into my diet. Then once my husband and I got married and moved in together, we realized how expensive it is to eat right. Our diet pretty much consist es of Frozen Pizza, Mac and Cheese, and Taco Bell! That is all going to change January 6th.
I am going Devote myself in doing the 30 day challenge to become Vegan. For all of you who don't know what a vegan is the definition is, "A vegetarian who eats plant products only, especially one who uses no products derived from animals, as fur or leather." Basically it means NO animal products. NO cheese, milk, egg, Nothing. So our days of Frozen Pizza and Mac and cheese are over!
Though becoming a vegetarian was easy for me, this will be difficult, but I know its the best thing I could do for myself. I will blog everyday about what I ate, and my challenges though each day, and after my 30 days, I will decide whether or not I can do this for a lifetime.
And So my Journey begins.........
